When I\u2019m in my other kitchen, my laboratory, I cook what I know the customer is going to like. So far, I\u2019ve had a good eye for figuring out what each person who comes in will like. Even so, I don\u2019t think that there is cuisine d\u2019auteur in Cuba. A lot more details are needed to be able to have that. In the kitchen, everything is improvised; based on that, what we do is create and find solutions. Here, people who go to restaurants are essentially looking for content, the products used to make the dishes, not for the cooking to be different, because everything\u2019s already been done. To do something new, you would have to have a very atypical proposal.<\/p>\n<p><strong>Pescado Florida<\/strong><\/p>\n<p>(This dish was part of the dinner served to singer Beyonc\u00e9 during her visit to San Crist\u00f3bal restaurant.)<\/p>\n<p><a href=\"http:\/\/www.oncubanews.com\/wmag\/wp-content\/uploads\/2013\/06\/Carlos-Crist\u00f3bal-San-Crist\u00f3bal_11241.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-10454\" alt=\"Carlos-Crist\u00f3bal-San-Crist\u00f3bal_1124\" src=\"http:\/\/www.oncubanews.com\/wmag\/wp-content\/uploads\/2013\/06\/Carlos-Crist\u00f3bal-San-Crist\u00f3bal_11241-300x198.jpg\" width=\"300\" height=\"198\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>fish fillet \u00a0\/\u00a0200 g<br \/>\nbutter \/ 10 g<br \/>\ncups flour \/ 2<br \/>\ncup of water \/ 1<br \/>\nwhole orange \/2<br \/>\nolive oil \/ 10 g<br \/>\nsalt and white pepper to taste<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>Season the fillets with salt and pepper and cover with flour. In a frying pan with the olive oil and butter, add fish and brown on both sides. Add the orange\u2019s zest and segments, previously cut into \u201csupremes,\u201d allow to reduce, and serve with vegetable garnish.<\/p>\n<p>Carlos Crist\u00f3bal M\u00e1rquez Vald\u00e9s \u00a0(Havana, 1963)<\/p>\n<p>A graduate of the Hotel Sevilla\u2019s Rub\u00e9n Mart\u00ednez Villena Polytechnic Institute. Was a chef at the hotels Riviera, Capri and Nacional. Has prepared meals for Cuban festivals in countries such as Brazil, Paraguay, Bolivia, Mexico, Italy, Spain and the United States. Founding teacher at the Hotel Comodoro\u2019s School of Gastronomy, 1989.
