
{"id":212451,"date":"2020-01-17T14:20:18","date_gmt":"2020-01-17T19:20:18","guid":{"rendered":"https:\/\/oncubanews.com\/en\/?p=212451"},"modified":"2020-01-17T14:20:18","modified_gmt":"2020-01-17T19:20:18","slug":"cuban-chefs-to-help-transform-state-gastronomy","status":"publish","type":"post","link":"https:\/\/oncubanews.com\/en\/cuba\/cuban-chefs-to-help-transform-state-gastronomy\/","title":{"rendered":"Cuban chefs to help \u201ctransform\u201d state gastronomy"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">Chefs from the Culinary Federation of Cuba (FCC) will contribute with the island\u2019s Ministry of Domestic Trade in the \u201ccomplex process of transformation of national state gastronomy,\u201d said Domestic Trade Minister Betsy D\u00edaz.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The culinary specialists will support the training and improvement of both administrators and workers of state gastronomic centers, as well as the rescue of typical and traditional dishes in these facilities, and the export of services and other elements of <\/span><a href=\"https:\/\/oncubanews.com\/tag\/cocina-cubana\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">Cuban cuisine<\/span><\/a><span style=\"font-weight: 400;\">, D\u00edaz said at a FCC national meeting.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The minister also explained that the members of the Culinary Federation will be part of the working groups, judges and commissions that will decide who will manage the gastronomic units, \u201cso that they can transform their current situation and become administrators with true skills,\u201d <\/span><a href=\"http:\/\/www.acn.cu\/cuba\/60171-asumen-transformacion-de-la-gastronomia-comercio-interior-y-culinarios-cubanos\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">pointed out a report<\/span><\/a><span style=\"font-weight: 400;\"> by the <em>Agencia Cubana de Noticias (ACN)<\/em> news agency.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">D\u00edaz praised the FCC&#8217;s work \u201cto safeguard and defend cuisine as culture, history and tradition\u201d and asked its chefs and other members to contribute to the \u201cambitious and profound transformation\u201d of state gastronomy, in which, she said, there is a \u201cnoticeable deterioration.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The minister recognized \u201clack of indiscipline\u201d and \u201cpoor service\u201d in state restaurants and cafeterias, and stated that \u201ca great deal of quality has been lost, and even, sometimes, the technical standards and technological plans are not respected, and there is a lack of motivation and desire to cook well.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">She also defended the export of Cuban culinary services as a way of \u201cattracting income to the country,\u201d and announced the holding at the beginning of February of the First Meeting of Gastronomic Techniques in Cuban municipalities, and in September of the national meeting.<\/span><\/p>\n<blockquote class=\"wp-embedded-content\" data-secret=\"w2Y8zcjJqB\"><p><a href=\"https:\/\/oncubanews.com\/en\/cuba\/cuba-sabe-2020-between-cuban-cassava-and-gourmet-cuisine\/\">Cuba Sabe 2020: between Cuban cassava and gourmet cuisine<\/a><\/p><\/blockquote>\n<p><iframe loading=\"lazy\" class=\"wp-embedded-content\" sandbox=\"allow-scripts\" security=\"restricted\" style=\"position: absolute; clip: rect(1px, 1px, 1px, 1px);\" title=\"&#8220;Cuba Sabe 2020: between Cuban cassava and gourmet cuisine&#8221; &#8212; OnCubaNews English\" src=\"https:\/\/oncubanews.com\/en\/cuba\/cuba-sabe-2020-between-cuban-cassava-and-gourmet-cuisine\/embed\/#?secret=pdDOIVIHpp#?secret=w2Y8zcjJqB\" data-secret=\"w2Y8zcjJqB\" width=\"500\" height=\"282\" frameborder=\"0\" marginwidth=\"0\" marginheight=\"0\" scrolling=\"no\"><\/iframe><\/p>\n<p><span style=\"font-weight: 400;\">For his part, <\/span><a href=\"https:\/\/oncubanews.com\/en\/cuba\/chef-eddy-fernandez-cuban-cuisine-deserves-being-recognized-as-a-national-heritage\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">chef Eddy Fern\u00e1ndez<\/span><\/a><span style=\"font-weight: 400;\">, president of the FCC, supported the minister&#8217;s request and favored the inclusion of the members of his organization \u201cin the rescue of the competitions of gastronomic techniques, and in increasing professional improvement and training,\u201d according to the <em>ACN<\/em>.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Fern\u00e1ndez said that the training and preparation of gastronomic personnel \u201crepresent today the number one priority\u201d of the FCC, \u201cwhose benefits are always reverted to a better service for tourism and its steady and safe growth.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cuban cuisine <\/span><a href=\"https:\/\/oncubanews.com\/en\/culture\/cuban-cuisine-declared-national-cultural-heritage\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">was declared<\/span><\/a><span style=\"font-weight: 400;\"> a cultural heritage of the nation last October, during the 7th International Culinary Festival held in Havana and organized by the FCC.
