
{"id":247291,"date":"2021-12-22T12:12:56","date_gmt":"2021-12-22T17:12:56","guid":{"rendered":"https:\/\/oncubanews.com\/en\/?p=247291"},"modified":"2021-12-22T12:12:56","modified_gmt":"2021-12-22T17:12:56","slug":"don-marios-cuban-cuisine","status":"publish","type":"post","link":"https:\/\/oncubanews.com\/en\/cuba\/society-cuba\/cuban-traditions\/don-marios-cuban-cuisine\/","title":{"rendered":"Don Mario\u2019s Cuban cuisine"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">A lifetime dedicated to cooking is the legacy that is left by Mario Hern\u00e1ndez del Sol, known in his native Cienfuegos and in the culinary trade as Chef Don Mario, for his elegance when it comes to working in such an exquisite profession.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Member and honorary president of the International Cuban Chefs Association of the World (ICCAW), an organization based in New Jersey, the United States, the work of this International Chef transcends the borders of his beloved Cienfuegos, from where he has never distanced himself \u201cbecause I was born in this province and I live here, and although some of my studies were in Havana, I never thought I would leave my city and my family behind,\u201d he confesses in an interview with <\/span><b>OnCuba<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">He has also taken his vocation to Canada, perhaps not with the same rigor with which he works on the island, since his visits there have been \u201cmore for <\/span><a href=\"https:\/\/www.facebook.com\/100005814240785\/videos\/784979281705873\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">family reasons<\/span><\/a><span style=\"font-weight: 400;\">,\u201d he clarifies, but he does know the culinary art of the northern country and even recognizes that between <\/span><a href=\"https:\/\/oncubanews.com\/en\/cuba\/cuban-cuisine-in-photos-what-my-mom-taught-me-about-cooking\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Cuban<\/span><\/a><span style=\"font-weight: 400;\"> and Canadian cuisine there are not many points of contact to establish a culinary mix between the two: \u201ctheir preparation and seasoning is different from ours, the only similar thing in their eating habits is the taste for fried and breaded dishes.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">On the other hand, \u201cin an environment other than ours,\u201d he clarifies, \u201cin order to value Cuban cuisine and achieve success, three principles must be met: to adapt it to the foreign consumer\u2019s palate; prepare fresh, natural and less seasoned recipes and reduce the size of the portions of the main dish and its side dishes,\u201d the latter characteristic that stands out in the preparation of Cuban dishes.<\/span><\/p>\n<blockquote class=\"wp-embedded-content\" data-secret=\"jub0CvecLG\"><p><a href=\"https:\/\/oncubanews.com\/en\/cuba\/cuban-cuisine-in-photos-what-my-mom-taught-me-about-cooking\/\">Cuban cuisine in photos: what my mom taught me about cooking<\/a><\/p><\/blockquote>\n<p><iframe loading=\"lazy\" class=\"wp-embedded-content\" sandbox=\"allow-scripts\" security=\"restricted\" style=\"position: absolute; clip: rect(1px, 1px, 1px, 1px);\" title=\"&#8220;Cuban cuisine in photos: what my mom taught me about cooking&#8221; &#8212; OnCubaNews English\" src=\"https:\/\/oncubanews.com\/en\/cuba\/cuban-cuisine-in-photos-what-my-mom-taught-me-about-cooking\/embed\/#?secret=8UZRnPQlL3#?secret=jub0CvecLG\" data-secret=\"jub0CvecLG\" width=\"500\" height=\"282\" frameborder=\"0\" marginwidth=\"0\" marginheight=\"0\" scrolling=\"no\"><\/iframe><\/p>\n<p><span style=\"font-weight: 400;\">\u201cCooking is an art because it takes a vocation,\u201d says Don Mario, \u201cit is done out of love and to do it well, you put your heart into it. their restaurants they are offered under the name of international cuisine, which many times does not live up to its originality and quality.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">And he adds: \u201cAll the countries of the world work their national cuisine first and it has been proven that it is the greatest attraction for foreign visitors,\u201d a reality that has not yet been fully assimilated and weighs down the desire to create a Cuban cuisine of high international recognition.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For Mario, a faithful defender of the country\u2019s autochthonous and regional cuisine, this aspect is fundamental in order to highlight Cuban cuisine in the region, not an easy task with references on the continent such as Mexico, <\/span><a href=\"https:\/\/oncubanews.com\/tendencias\/cocina\/cocina-peruana-con-sazon-cubano\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Peru<\/span><\/a><span style=\"font-weight: 400;\"> and Brazil, just to mention three countries with extensive culinary tradition recognized internationally, with their respective gastronomic capitals.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">However, this retiree (not retired) chef continues to offer his art not only to clients, friends and family, but to all who are new to this fascinating world of culinary art, for all who begin to study the secrets of Cuban and international cuisine.<\/span><\/p>\n<div class=\"jeg_video_container jeg_video_content\"><iframe
