
{"id":298060,"date":"2024-03-12T19:41:49","date_gmt":"2024-03-12T23:41:49","guid":{"rendered":"https:\/\/oncubanews.com\/en\/?p=298060"},"modified":"2024-03-12T19:42:47","modified_gmt":"2024-03-12T23:42:47","slug":"nutritional-education-in-cuba-in-full-crisis","status":"publish","type":"post","link":"https:\/\/oncubanews.com\/en\/cuba\/economy\/cuban-economy\/nutritional-education-in-cuba-in-full-crisis\/","title":{"rendered":"Nutritional education in Cuba in full crisis"},"content":{"rendered":"<p><i><span style=\"font-weight: 400;\">By Laura B\u00e9cquer<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Modifying the eating habits of Cubans amid the current food shortage with criteria of health and local availability is the purpose of the nutritional education project promoted since 2017 by the Spanish-French entrepreneur Mar\u00eda Paco in Cuba.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cMany laughed when I presented this project to diversify the Cuban plate and learn to eat healthier: with vegetables, without sugar, and without the \u2018main course\u2019 as they call meat here,\u201d she tells EFE from her Do\u00f1a Mar\u00eda agroecological farm, located on the outskirts of Havana.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Paco says that she left her job in France as a fruit seller for an international company and went to Cuba for the first time in 2014. Photo: EFE\/Ernesto Mastrascusa.<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">Her \u201calternative\u201d menu ranges from an eggplant spread on bread, salads with lentils, cabbage, and chili; vegetarian pizzas with basil, oregano, rosemary, or parsley \u2014 without the typical cheese or tomato puree \u2014, to replacing carbonated and chemical soft drinks with fruits like bananas, she explained.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI started with the same people who helped me on the farm. At first, they gave me a strange look when, instead of chicken, I offered them yellow rice with only vegetables or gave them a snack with toast, eggplant paste, and tomato juice. Photo: EFE\/Ernesto Mastrascusa.<\/figcaption><\/figure>\n<p><b>A school farm<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Upon becoming a local development project in 2017, Paco\u2019s initiative signed an agreement with the Juan Tom\u00e1s Roig primary school \u2014 for children between 5 and 11 years old \u2014 in the El Cacahual community to talk about \u201cnutritional education.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThe idea was for the children to come once a month to cook, to learn, to eat vegetables, to learn that they can eat healthier and easier with what they have on hand at home and do without a little junk food,\u201d she commented.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThey value the work of the farmer, they learn to collect their vegetables, prepare them, and then they eat what they themselves make,\u201d she explained.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The experiences of the children participating in Mar\u00eda\u2019s project were collected in the audiovisual series: \u201cCocinar, un juego para todos\u201d (Cooking, a game for everyone), sponsored by the <\/span><a href=\"https:\/\/oncubanews.com\/cuba\/gobierno-cubano-pide-ayuda-al-programa-mundial-de-alimentos-de-la-onu-por-la-escasez-de-leche-para-ninos\/\" target=\"_blank\" rel=\"noopener\"><b>World Food Program (WFP)<\/b><\/a><span style=\"font-weight: 400;\">, the United Nations Educational, Scientific and Cultural Organization (UNESCO) and the United Nations International Children&#8217;s Emergency Fund\u00a0(UNICEF).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The series of ten 8-minute programs contains its own recipe with the products grown on the Paco farm, as explained by the French director Dominique Cl\u00e9ment during the recording of one of them just a few days ago in Havana.<\/span><\/p>\n<figure id=\"attachment_298067\" aria-describedby=\"caption-attachment-298067\" style=\"width: 1140px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-298067\" src=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1.jpg\" alt=\"\" width=\"1140\" height=\"633\" srcset=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1.jpg 1140w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1-300x167.jpg 300w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1-1024x569.jpg 1024w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1-768x426.jpg 768w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2024\/03\/educacion-nutricional-efe-2024-2-1140x633-1-750x416.jpg 750w\" sizes=\"auto, (max-width: 1140px) 100vw, 1140px\" \/><\/a><figcaption id=\"caption-attachment-298067\" class=\"wp-caption-text\">Students participate in a healthy cooking workshop at Mar\u00eda Paco\u2019s farm, where an episode of the series \u201cCocinar, un juego para todos\u201d is also being recorded. Photo: EFE\/Ernesto Mastrascusa.<\/figcaption><\/figure>\n<p><b>Changing habits<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Paco highlights that her project gained more value when the <\/span><a href=\"https:\/\/www.redisla.gob.cu\/images\/jdownloads\/Documentos\/goc-2022-o77_Ley_de_soberana_alimentaria.pdf\" target=\"_blank\" rel=\"noopener\"><b>Food Sovereignty Law<\/b><\/a><span style=\"font-weight: 400;\"> was approved in 2022 because the law \u201cdefends taking advantage of what we can grow from an approach that also respects nature.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This legislative text proposes the strengthening of municipal autonomy, reducing losses due to food waste and promoting the practice of sustainable agriculture on agroecological bases, among other issues.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Paco herself recognizes that \u201cin Cuba, the food is very good, but sometimes it disappears and becomes a headache for many parents. That\u2019s why I try from my space to instill in them that to eat well, you don\u2019t need chicken, for example.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">However, she admitted that \u201cthe most difficult thing has been to change the mentality and habits of Cubans: they still laugh when I tell them that they can eat without \u2018main
