One sip and then another; your glass is still almost full. \u201cIt\u2019s a velvety rum with a lush bouquet, very enduring\u2026.\u201d says rum master Tranquilino Palencia, speaking as though he were reciting a poem. He is referring to Santiago 500, the \u201cnewest\u201d of the aged rums produced in Cuba, named in honor of the legendary eastern Cuban city\u2019s 500th anniversary.<\/p>\n<p>It is the city where light rum was first created, in 1862, definitively surpassing the coarse pirates<strong>\u2019<\/strong> beverage known as <em>rumbullion<\/em> or <em>tafia<\/em>. Rum<strong>\u2019s<\/strong> origins, intertwined with the sugar industry and slavery of the Spanish colonial period, root it firmly in the island<strong>\u2019<\/strong>s identity and history.<\/p>\n<p>And of course, that ancestry is a motive for pride on the part of <em>santiagueros<\/em>. Architect Omar L\u00f3pez, director of the Santiago de Cuba Conservator\u2019s Office, explains the formula as if it were a riddle. \u201cThey say that Cuban rum is the best in the world. I think that if Santiago rum is the best in Cuba, then Santiago rum is the best on the planet.\u201d<\/p>\n<p>This is also the city of boleros, son, trova\u2026and musical tradition has become interwoven with the culture of drinking, all of it wrapped up in a halo of romance, playfulness and heartbreak, going back to the times of Pepe S\u00e1nchez, \u00d1ico Saquito and Sindo Garay.<\/p>\n<p>In Cuba\u2019s \u201cmost Caribbean city\u201d\u2014perhaps like nowhere else\u2014rum is synonymous with fiesta, carnival, and conga lines sweeping down Trocha street. It is for good reason that rum was described as the joyful offspring of sugar cane\u201d by Cuban journalist and writer Fernando Gonz\u00e1lez Campoamor.<\/p>\n<p>Today, Cuba has seven rum masters nationwide, and three of them are from Santiago. They ensure that the right balance is maintained between a century and a half of legacy and modern technology and good practices. Their future successors are six rum master candidates, which for the first time include women\u2014five of them.<a href=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/07\/DSC4205.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-52157 \" src=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/07\/DSC4205-199x300.jpg\" alt=\"_DSC4205\" width=\"329\" height=\"496\" srcset=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/07\/DSC4205-199x300.jpg 199w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/07\/DSC4205-679x1024.jpg 679w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/07\/DSC4205.jpg 755w\" sizes=\"auto, (max-width: 329px) 100vw, 329px\" \/><\/a><\/p>\n<p>Sensory evaluation and knowledge passed on from one generation to the next provides a certain mystique to the production process, especially in the case of dark or extra-aged rums. Some oak barrels can be up to 90 years old, and it is precisely the oldest ones that are chosen for the final stages of aging.<\/p>\n<p>In the vaults, the atmosphere feels dense and the smell seems to stick to your body. \u201cThe rums that have passed through several types of barrels generate an extraordinary taste,\u201d says Palencia, who does not hide his passion for his trade.<\/p>\n<p>Santiago 500 is categorized as \u201cbrightly dark amber.\u201d Like other rums from the same family, it is characterized by a long \u201cduration in dry cup,\u201d (permanencia en copa seca) according to rum jargon. The jewel-shaped bottle seen in the photo will cost around $5,000, Limited Edition.<\/p>\n<p>When having an intimate conversation or family dinner, one will have to think twice before pouring a few drops on the floor, \u201cfor the saints.\u201d A gesture like that confirms the long tradition of drinking in this nation\u00b4s customs, whether or not for religious reasons.<\/p>\n<p>Contrary to what some might think, Top Rum Master Juan Carlos Gonz\u00e1lez says there is no \u201cmagic recipe.\u201d \u201cObviously, there are things that we don\u2019t announce from the rooftops; nobody does that. But even if it were told, it can\u2019t be repeated anywhere else. I think the main secret of Cuban rum is our country: the soil, the climate, our history, and our people.\u201d<\/p>\n<p>Every variety is distinguished by the particular flavor of the region from which it comes. \u201cRums are different according to region: in the west, they have been drier rums; central Cuba specializes in semi-dry rums; and they always say that Santiago rums are the sweetest in the country,\u201d says Isabel Cristina Rivero, the first woman rum master candidate.<\/p>\n<p>\u201cIt is a single cultural expression, but with flavors and aromas that are consciously differentiated, as seen, perhaps, in our culture of mixed parentage,\u201d says Top Rum Master Jos\u00e9 Pablo Navarro, leader of this movement.<\/p>\n<p>In 1947, historians from all over the country gathered here, led by Emilio Roig de Leuchsenring, and they decided to declare Santiago \u201cthe city of history.\u201d Many also refer to it as the \u201cscenic outlook city\u201d because of its undulating, hilly streets. From the highest streets, you can see the ocean and the Sierra Maestra mountains, and all of their beauty.<\/p>\n<p>The Don Pancho aging vault is in the middle of what\u2019s known as the \u201crum zone.\u201d Some people say that Santiago\u2019s Rum Museum, which is about to turn 19 years old, is prettier than Havana\u2019s. \u201cThis is the original,\u201d they say.<\/p>\n<p>The history that the rum masters watch over here is one they know by heart. They have lived it, they are part of it.
