
{"id":55480,"date":"2015-09-23T04:58:42","date_gmt":"2015-09-23T08:58:42","guid":{"rendered":"http:\/\/oncubamagazine.com\/?p=55480"},"modified":"2015-09-23T04:58:42","modified_gmt":"2015-09-23T08:58:42","slug":"pinar-del-rios-new-exotic-dish","status":"publish","type":"post","link":"https:\/\/oncubanews.com\/en\/styles-trends\/cookery\/pinar-del-rios-new-exotic-dish\/","title":{"rendered":"Pinar del Rio\u2019s New Exotic Dish"},"content":{"rendered":"<p>Till recently, it was yet another of the many endemic species of the <em>Sierra de los Organos,<\/em> in the countryside of Pinar del Rio, but soon <em>Zachrysia guanensis <\/em>could become one of the most exclusive dishes of Cuban cuisine.<\/p>\n<p>That, at least, is the intention of Manuel Correa, an enterprising man from Pinar del Rio who decided to put into practice what studies by researchers and scientists suggested long ago and no one had yet materialized: breeding this curious terrestrial mollusk.<\/p>\n<p>Correa tells us that the idea arose from a project undertaken by European experts and the Cuban Ministry of Science, Technology and the Environment in 2006, a project that was later abandoned.<\/p>\n<figure id=\"attachment_55484\" aria-describedby=\"caption-attachment-55484\" style=\"width: 755px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-04.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-55484 size-full\" src=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-04.jpg\" alt=\"caracol-04\" width=\"755\" height=\"897\" srcset=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-04.jpg 755w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-04-253x300.jpg 253w\" sizes=\"auto, (max-width: 755px) 100vw, 755px\" \/><\/a><figcaption id=\"caption-attachment-55484\" class=\"wp-caption-text\">Manuel Correa hopes his snails will become a delicacy.<\/figcaption><\/figure>\n<p>The aim, Correa explains, is to help in the conservation of the <em>Zachrysia<\/em>, a very fragile species that has suffered the impact of human activity and its natural predators in recent times.<\/p>\n<p>\u201cThere are trails where it has disappeared altogether owing to several factors, such as intensive animal breeding,\u201d he says.<\/p>\n<figure id=\"attachment_55486\" aria-describedby=\"caption-attachment-55486\" style=\"width: 755px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-03.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-55486 size-full\" src=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-03.jpg\" alt=\"For years, several scientific institutions have used the snail as a laboratory animal.\" width=\"755\" height=\"490\" srcset=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-03.jpg 755w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-03-300x195.jpg 300w\" sizes=\"auto, (max-width: 755px) 100vw, 755px\" \/><\/a><figcaption id=\"caption-attachment-55486\" class=\"wp-caption-text\">For years, several scientific institutions have used the snail as a laboratory animal.<\/figcaption><\/figure>\n<p>The project aimed at protecting this snail, which can grow as long as 5 centimeters (2 inches) and weigh as much as 30 to 40 grams, was undertaken in an area located at the foot of the <em>Valle de Dos Hermanas<\/em> mountains, in the heart of the Vi\u00f1ales National Park.<\/p>\n<p>According to Manuel, the site was chosen because its conditions are ideal for the <em>Zachrysia<\/em>\u2019s reproduction. There, 10 man-made breeding facilities were built to house a total of 80 snails and vegetation consumed by these mollusks was planted.<\/p>\n<p>Though conservation has always been the project\u2019s chief aim, the significant growth of the snail population has led some to consider taking advantage of this process.<\/p>\n<p>Correa estimates that anywhere from 900 to 1000 individuals can begin to be extracted from the population following the reproductive period, between the months of May and October.<\/p>\n<figure id=\"attachment_55487\" aria-describedby=\"caption-attachment-55487\" style=\"width: 755px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-06.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-55487 size-full\" src=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-06.jpg\" alt=\"In this area, at the foot of the mountains, the conservation project has been underway for five years.\" width=\"755\" height=\"566\" srcset=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-06.jpg 755w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-06-300x225.jpg 300w\" sizes=\"auto, (max-width: 755px) 100vw, 755px\" \/><\/a><figcaption id=\"caption-attachment-55487\" class=\"wp-caption-text\">In this area, at the foot of the mountains, the conservation project has been underway for five years.<\/figcaption><\/figure>\n<p>Maria Enma Palacios, an expert working at the Vi\u00f1ales National Park, explains that the <em>Zachrysia guanensis<\/em> has been used as a laboratory animal by several Cuban scientific institutions for decades and that, in addition to this, the species could be used to manufacture cosmetics and, most significantly, for human consumption.<\/p>\n<p>In this connection, she points that that they have already been experimenting with several recipes.<\/p>\n<p>\u201cResearch conducted by the University of Pinar del Rio suggests that its meat has high protein content, is devoid of fat, very healthy and easy to digest,\u201d Enma comments.<\/p>\n<p>Hence current efforts to secure permits to begin collecting these specimens and begin including it on the menus of local restaurants, where it is hoped many patrons will make the concluding remark of Pumbaa, the Lion King\u2019s lovable character: \u201cSlimy, yet satisfying!\u201d<\/p>\n<p><a href=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-09.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-55488 size-full\" src=\"https:\/\/oncubanews.com\/wp-content\/uploads\/2015\/09\/caracol-09.jpg\" alt=\"caracol-09\" width=\"755\" height=\"470\" srcset=\"https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-09.jpg 755w, https:\/\/oncubanews.com\/en\/wp-content\/uploads\/2015\/09\/caracol-09-300x187.jpg 300w\" sizes=\"auto, (max-width: 755px) 100vw, 755px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Till recently, it was yet another of the many endemic species of the Sierra de los Organos, in the countryside of Pinar del Rio, but soon Zachrysia guanensis could become one of the most exclusive dishes of Cuban cuisine.
