Strawberry infusion

Strawberries are a favorite for their intense flavor and excellent nutritional properties. In fact, they have more Vitamin C than many citrus fruits.

This fruit is a frequent ingredient for those who want to slim down. Eighty-five percent of a strawberry’s composition is water, giving it diuretic qualities that are excellent for those who want to lose weight and have a tendency to retain liquids. This effect is also beneficial for those who have kidney stones or high blood pressure.

Strawberries also have vitamins A and E and smaller quantities of other vitamins, such as B1, B2, B3 and B6. With respect to minerals, this fruit’s main contributions are potassium and magnesium, although it also contains iron, phosphorus, iodine and calcium.

This is a recipe for a delicious dessert that can be enjoyed at the Café Laurent restaurant.

Frozen strawberries / 100 g

Ice cream scoop / 1

Crispy sweet bread / 1

Preparation

Prepare a light caramel with white sugar, add the frozen strawberries and then drizzle a few drops of balsamic vinegar. Let stand at room temperature. 
Serve this infusion in a goblet with a scoop of ice cream and crispy sweet bread or a wafer on top.
