Baracoa, a city in the easternmost province of Guantanamo, Cuba, is the largest producer of cacao in the country. Local farmers have preserved the traditional method to process the fruit to produce the chocolate balls that are typical of that region. They are made of pure cacao, without any kind of chemical additives, and are used by the locals to make a traditional drink called “chorote”. The chocolate balls are grated to obtain cocoa, which is then cooked with flour to make the drink.
